Whole Grain Mustard Dressing/Sauce Salade Rustique

This dressing, made with the best ingredients, captures all of the bold flavor and texture of old-fashioned, whole grain mustard. Its hearty mustard flavor is the perfect complement to cob salads and chicken salads, and brings tomato and thyme salads to life.

 

 

 

 

 

SALAD FRISEE WITH BACON & Whole Grain Mustard Dressing

(Serves 2)

Our dressing, made with the best ingredients, captures all of the bold flavor and texture of old-fashioned, whole grain mustard and will bring your salads "to life"!

 

Ingredients

· 1/3 pound slab bacon, cut into 1/2-inch cubes

· 12 croutons (1/2-inch cubes) cut from sweet French bread (crust removed, rubbed with garlic and lightly toasted)

· 1/3 cup Life in Provence™ Whole Grain Mustard Dressing

· 3 cups torn frisee or curly endive, rinsed and patted dry

 

Sauté the bacon in a small heavy skillet over medium heat for about 5 minutes.

When browned, remove it with a slotted spoon and set it aside.

Add the croutons to the skillet and sauté until the bread is browned on all sides.

Return the bacon to the skillet and heat it rapidly with the croutons, stirring constantly, until very hot.

Remove the skillet from the heat and quickly add 1/3 cup of the Whole Grain Mustard Dressing, stirring well.

Place the chicory in a salad bowl and toss it with the hot dressing, bacon, and croutons.

Serve immediately.

The Whole Grain Salad Dressing is also delicious on cobb salads and grilled chicken salads.

Ingredients:

Water, sunflower oil, old wine vinegar, whole grain mustard, salt, sugar, natural thickeners: xanthan and guar gums, white pepper, lemon juice concentrate, natural color: annatto extract.

Guar Gum is derived from the ground endosperm of the guar plant.

Guar Gum is a natural high molecular weight hydrocolloidal polysaccharide composed of galactan and mannan units combined through glycosidic linkages, (galactomanan)
Dissolved in cold or hot water, guar gum forms a slime of high viscosity.

Guar Gum is generally used as an excellent and reasonable thickener and stabilizer in many aqueous systems.
