Thyme is the most popular herb in Provençal cuisine. After it is picked wild on the hills (before flowering), its tiny leaves are separated from the branches.
Provençal grande mamans sometimes use thyme as an herbal tea to facilitate digestion... However, thyme is first and foremost a versatile cooking herb, delicious for seasoning just about anything - game, poultry, grilled meat, fish or a simple tomato- and- onion sauce.
