Tapenade/Tapenade de Provence ![]()

Provençal people have the habit of just dropping by unannounced. Nobody minds, it is an opportunity to share a moment. There is always food but no pressure to prepare anything. Open a bottle of wine and a jar of tapenade, spread it on bread or our cocktail party toasts, perhaps with a layer of goat cheese. With our tapenade, prepared at the foot of the Lubéron, you can be Provençal anytime, any place. Tell your friends to just stop by… and let time stand still.
Bow Tie Pasta With Tapenade Sauce ![]()
(Serves 4)
Delight your family and friends with our refined black olive Tapenade, which is made at the foot of the Lubéron mountains from the freshest olives, oil and herbs.
Ingredients
· 1/2 pound bow tie pasta
· 2 shallots, chopped
·
1 cup dry white wine· 3 tablespoon crème fraîche
·
½ stick chilled unsalted butter, cut into pieces·
4 tablespoons Life in Provence™ TapenadeCook the pasta until al dente
While the pasta are cooking, mix the shallots and the wine in a small saucepan and simmer over medium heat.
When the liquid is reduced to ¼ cup, discard the shallots and add the crème fraîche.
Bring to a boil for a few minutes then reduce the heat to low and add the butter.
Mix until melted and then whisk in the Tapenade.
Mix this sauce with the drained bow tie pasta and serve immediately with crusty French bread, a green salad, and a nice Pinot Noir.
Tapenade makes an easy and delicious appetizer when spread on Petits Toasts or toasted bread. If you prefer to serve the Tapenade hot, it can also be used as a stuffing for tomatoes and peppers.
