Strawberry and rhubarb were made for each other; strawberry on its own can be too sweet for the adult palate. In our jam, the rhubarb mellows the strawberry while still letting it sit center stage. Before our jam, this combination, quite common in Provence, had already found its way to the American kitchen in the form of delicious pies.
