RATATOUILLE QUICHE ![]()
(Makes one 9-inch quiche)

Ingredients
· Frozen flaky pastry dough (enough to line a 9-inch pie dish)
· 3 large eggs, lightly beaten· 1 1/2 cup crème fraîche, heavy cream, or half and half
· A pinch of salt and pepper
· A pinch of ground nutmeg
· 3/4 cup grated gruyere or Swiss cheese
· 1 jar Life in Provence™ Ratatouille
Preheat the oven to 375 degrees.
Line the pie dish with the dough, and, using a fork, prick holes on the bottom and around the sides.
Place the dish in the oven for approximately 10 minutes until the dough becomes lightly browned then remove it from the oven and set it aside.
Beat the eggs with the cream, salt, pepper and nutmeg.
Line the bottom of the piecrust with grated cheese, and then spoon the ratatouille mixture on top, spreading it out until the mixture completely covers the bottom of the crust.
Pour the egg mixture into the pie dish and cover with well-greased tin foil.
Put in the oven for approximately 30 minutes.
Remove the foil and cook another 15 min, until the quiche is golden brown on the top and the mixture solid in the center.
Ratatouille is delicious hot or cold, as an appetizer ("Provençal salsa"), in an omelet or served with grilled meats, pasta or rice.
