(Serves 6) Our Provençal Vinaigrette has no equivalent on the market. It is carefully crafted from a blend of grapeseed and olive oils, aged wine vinegar and specially chosen Herbes de Provence.
Ingredients · 6 ounces soft white goat cheese · 3 tablespoons milk or cream · 1 tablespoon fresh thyme leaves, finely chopped· 12 thin slices baguette bread· Mixed mesclun greens (about 6 cups)· ½ cup chopped walnuts (optional)· ½ cup Life in Provence™ Provençal Vinaigrette· Salt and freshly ground black pepperPreheat broiler. In a small bowl, mix together the goat cheese, the milk or the cream and the thyme until the mixture becomes smooth and spread able. Broil the slices of bread just until they begin to brown. Remove from broiler and spread each generously with cheese mixture. Toss the greens with the walnuts, add ½ cup of the Provençal Vinaigrette and season to taste. Evenly arrange the greens on individual plates, and top with two croutons. Serve immediately, as a first course or as an elegant accompaniment to a dinner entree. The Provençal Vinaigrette is also a perfect complement to tomato or pasta salads.
