Provençal Fig Jam/Figue Rouge du Soleil

In the central "place" (square) of many Provençal villages, grow fig trees, under which the locals play pétanque, with heavy metal balls that roll on the uneven sand.

Fig is sometimes associated with vanilla or pear in Provençal jams. We wanted to make a jam using only red figs in order to fully deliver their unique taste, which is more uncommon in the United States.

Our Provençal fig jam is full of morsels of tree-ripened fig. It is best enjoyed on a baguette or croissant; then, if you feel daring, perhaps dipped into tea or coffee, "à la française"...
