Cocktail Party Toasts/Petits Toasts

The Petits Toasts are the ideal way to ensure you can enjoy Provençal foods at anytime of the day. 

In the morning, spread a little butter and one of our Provençal jams: breakfast is ready! How about a platter of these jam toasts to share in the middle of the table when treating guests to breakfast? 

At noon, spread a little cheese on a square of lettuce for a lunch snack.

In the evening, keep the toasts handy to dip in your favorite soup. Or yet, make a Provençal appetizer platter. Of course the petits toasts are fantastic for the classic bite-size appetizers (see how the salmon's flavor comes through after that crunch), but you could also indulge in the following suggestions. How about a layer of tapenade followed with a layer of bucherolle goat cheese... and a gulp of red wine? This makes Julien go wild. 

Next toast: a sliver of pâté topped with a slice of cornichon. Next: lettuce with brie (or camembert or goat cheese). Next: a simple slice of saucisson (a dry sausage, visually comparable to salami but drier and quite different in taste -- do not call saucisson "salami" in France or you will get arrested!). 

What else? Finish them off with a toast of our sautéed eggplant: friends for life.
