FROM FRENCH FIELDS
You can almost taste the sun of southern France in these two new products from Life in Provence. Both are all-natural, made from fresh vegetables grown near Avignon. Ratatouille is a blend of tomatoes, zucchini, eggplant, onions, and sweet peppers, with a touch of extra-virgin olive oil and herbs. Aubergines à la Provençale is mostly sautéed eggplant, accented with tomato puree, garlic, and herbs. Both are made according to a family recipe, then carefully spooned by hand into the jars to maintain the wonderful chunkiness of the vegetables. You can serve them hot or cold as an easy side dish, a bread spread, a vegetarian entrée, or a dip (a French salsa, if you will). I like them best on their own, heated and scooped up with slices of crusty French bread.
