Grilled Tuna Salade Niçoise

The distinctive taste of Dijon mustard is a perennial favorite. Prepared in the authentic home-style way, our Dijon Mustard Dressing will add the perfect flavor to your Niçoise salads.
Ingredients
· 8 new potatoes, cooked in salted water until tender, quartered and chilled
· 8 plum tomatoes, quartered
· 2 spring onions
· 1/2 pound green beans, cooked until tender, and chilled·1 cup Life in Provence™ Dijon Mustard Dressing
· 3 fresh ahi tuna steaks (about 6 oz. each)
· 1/2 cup Life in Provence™ Niçoise Olives
· 6 hard-cooked eggs, shelled and quartered
· Anchovy fillets (optional)
Prepare the grill
In separate bowls, toss the potatoes, the tomatoes, chopped onions and the green beans each with 1/3 cup Dijon Mustard Dressing.
Cook the tuna until just cooked through, about 5 minutes on each side.
When cooked, remove from the grill and cut into small pieces.
On a large platter, arrange the vegetables and the olives, the eggs and the tuna in separate rows.
Arrange anchovies (if using) in a lattice pattern over the tuna.
Serve this salad as a main course, accompanied with crusty French bread and a nice white wine.
Variation: Instead of grilled ahi tuna steaks, substitute 12 ounces canned white tuna (drained and flaked).
Dijon Mustard Dressing is perfect with any salad with any kind of meat (chicken, turkey, bacon, ham), fish (tuna) or eggs.

Guar Gum is a
natural high molecular weight hydrocolloidal polysaccharide composed of galactan
and mannan units combined through glycosidic linkages, (galactomanan)
Dissolved in cold or hot water, guar gum forms a slime of high viscosity.
Guar Gum is generally used as an excellent and reasonable
thickener and stabilizer in many aqueous systems.
