French Gherkins/Cornichons ![]()
These tart, crispy pickles are a classic complement to the Provençal table, particularly for the tradition of "Apéritif", the appetizers at the beginning of dinner. Cornichons and pâté are made to go hand in hand.
You can also serve cornichons with cheeses, smoked meats and fish, or in a salad. Serve whole or sliced in two (lengthwise).
Finally, cornichons are amazing in a baguette sandwich. Some of Julien's favorites are "sandwich brie cornichons", "sandwich camembert cornichons" and "sandwich rillettes cornichons". Walk into a café in Provence and order "un pâté cornichons" (short for "un sandwich au pâté et aux cornichons"): the bread is great, the pâté is great, but the cornichons really make the sandwich!
