Aïoli / Provençal Garlic Mayonnaise

 

 

Aïoli sums up what it means to be Provençal: imagine sitting at a table with your family and friends. In the center, cold cuts, grilled fish, steamed vegetables, hard-boiled eggs and bread. Amid the chaos of laughter, loud conversation and clinking glasses, hands stretch across the table as all help themselves to the various foods, which are then dipped into the bowls of Aïoli. With our aïoli, you too can bring out the Provençal in you. We make our aïoli in Provence with the first garlic of the season, which is very tender and not overpowering.    Why eat mayonnaise, when you can live Aïoli? Our Aïoli is made with the "first garlic": the very tender and delicate garlic from the first crop of the season. This traditional Provençal mayonnaise turns fish, meat and vegetables into a quick main course or side dish.

 

 

 

Grilled Salmon With Aioli 

(Serves 4)

Ingredients

· 4 salmon steaks (about 6 ounces each)

· Life in Provence™ Extra-Virgin Olive Oil for brushing the salmon

· Salt and pepper to taste

· ½ cup (4 ounces) crème fraîche

· ½ jar Life in Provence™ Aïoli (Garlic Mayonnaise)

Prepare the grill.

Brush the salmon with olive oil and sprinkle with salt and pepper.

Grill the salmon on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, about 5 minutes on each side.

While the salmon is on the grill, heat the crème fraîche at a very low temperature (do not bring to a boil).

Just before removing it from the grill, add the Aïoli to the crème fraîche and season to taste with salt and pepper.

Serve the salmon with the Aïoli sauce spooned over top, and accompany with fresh sautéed asparagus, crusty French bread, and a nice Chardonnay.

Aïoli can also be served as part of a hors d’oeuvre platter consisting of cooked vegetables, hard-boiled eggs and the golden mayonnaise itself. Another alternative is to serve it in a "grand aïoli", a main dish in which the mayonnaise is served as a dipping sauce for meat, seafood and steamed vegetables.

Ingredients:

Sunflower oil, milk, spices, egg yolks, mustard, lemon juice concentrate, natural thickeners: xanthan and acacia gums, natural color: tagetes extract.

Natural Additives:

A food additive is any substance added to a food product, either directly or indirectly, that affects its product characteristics. Food additives play an important role because they help maintain product consistency, palatability and wholesomeness, improve or maintain nutritional value, and enhance or maintain the flavor of food products.

Produced from the fermentation of corn sugar (by the xanthomonas bacteria), xanthan gum is used as a thickener, emulsifier in dairy product and dressings (it is a water-soluble polymer).

Acacia gum comes from acacia trees and is used in combination with other additives as a thickener and emulsifier.
